A Taste of the Islands:
Lomi-Lomi Salmon is a side dish with a long history. The name derives from the Hawaiian "lomi-lomi" which means to massage. The ingredients are mixed, or massaged, together gently by hand. Versions of this dish date back to the 1700's when salted fish and meats were extremely common. As additional ingredients became available, they were added to the existing recipe. The flavors of the dish pair nicely with many other Hawaiian favorites, making Lomi-Lomi Salmon a staple at many gatherings.
Try it for yourself:
Lomi-Lomi Salmon
- 1 1/2 lbs. Salmon filets
- Hawaiian Salt
- 3 tomatoes, peeled and diced
- 1 small sweet onion, diced
- 3/4 tsp sugar
- 1 tsp pepper
- 1/8 tsp Tabasco sauce (optional)
- Green onion for garnish
Directions:
-Lay salmon on bed of Hawaiian salt in a dish, cover with more salt, and refrigerate overnight
-Next day rinse salt off and dice salmon
-Mix salmon with tomatoes and onions, and mix in remaining ingredients
-Toss lightly with hands
-Garnish with sliced green onion
Serve chilled.
Often served alongside dishes like ahi tuna, poke, kalua pig, laulau, and poi.
